They discovered that seitan makes an excellent meat replacement—it's chewy, satisfying, and flavorful. Seitan is the base for many commercially available vegetarian products such as Tofurky deli slices, meatless frankfurters, fakin' bacon, and others.

  3. Prepare 50 g levure maltée
  4. Get 2 cs paprika fumé
  5. Prepare 2 cs poudre d'oignons
  6. Make ready 2 cs basilic séché
  7. Take 2 cs ketchup
  8. Take 250 ml sauce soja
  9. Get 700 ml d'eau chaude
  10. Make ready 1 l bouillon de légumes

So seitan is basically just gluten. Seitan (pronounced "say-tan") is a vegan meat substitute made entirely out of hydrated gluten, the main protein found in wheat. It is sometimes also called wheat gluten, wheat meat, wheat protein. Our seitan is soft in the middle, and has a nice crust on top flavored with mustard.

Steps to make Seitan (vegan):
  1. Dans un grand bol, bien mélanger la farine de gluten, la farine de pois chiches, la levure alimentaire, le paprika fumé, le basilic séché et la poudre d’oignon. Mettre de côté.
  2. Dans un autre bol, mélanger le ketchup, la sauce soja et l’eau chaude.
  3. Incorporer les ingrédients humides aux ingrédients secs et bien mélanger. - Pétrir de 2 à 3 minutes en ajoutant de la farine de gluten si nécessaire.
  4. Envelopper dans un film plastique ou un tissu style gaze et nouer les deux extrémités en laissant 2 cm à chaque extrémité pour permettre à la pâte de gonfler.
  5. Dans une casserole, porter à ébullition le bouillon de légumes et y plonger le seitan. (J'ai un très grand wok ce qui est très pratique pour faire cuire des gros morceaux de seitan)
  6. Réduire le feu et faire pocher le seitan à feu doux durant 1 heure en le retournant occasionnellement.
