In another large mixing bowl beat the cream cheese with the vanilla and cookie butter spread until combined and mixture is smooth. Fold the whipped cream into the cheesecake mixture and mix until all the ingredients are combined. The base is made out of speculoos brown butter crumble, on it goes a layer of melted speculoos spread, followed by a whipped cheese filling of Philly cream cheese, more cookie crumbles and a drizzle of speculoos sauce. To top the damn thing is more cookie crumbles and a generous drizzle of speculoos sauce.

Steps to make Cheesecake spéculos:
  1. Commencer à mixer les spéculos et ensuite ajouter le beurre fondu et remixer le tout dans un moule de 20cm avec du papier sulfurisé dans le fond et le tour du moule et mettre au frigo
  2. Mélanger le Philadelphia et le mascarpone au robot une fois bien mélangé ajoutez le chocolat blanc fondu et l’extrait de vanille et mélanger le tout débarrasser le bol du robot met le mélange au frais une fois la cuve du robot laver fouetté la crème liquide fluide et laisser tourner arrêter le robot ajouter le sucre glace et remettre à tourner
  3. Dans un saladier ajoutez la première partie et ensuite y ajouter la crème fluide ajoutez une cuillère à la fois jusqu’à obtention d’une crème homogène sortir le moule du frigo et y ajouter le mélange et bien étaler partout et remettre le tout au frigo une bonne heure
  4. Faire fondre un peu la pâte à spéculos et la laisser un peu durcir et le verser avec le reste des gâteaux faites le décor de votre choix
