Instructions to make Lime curd:
  1. Prélever le jus des citrons ainsi que le zeste d'au moins 1
  2. Dans une casserole, fouetter les oeufs et le sucre (vous pouvez remplacer par 100g de sucre de coco mais attention, il a tendance à colorer la préparation !).
  3. Ajouter la maïzena, le jus de citron et les zestes
  4. Faire chauffer à feu doux. Après environ 1min, ajouter le beurre. A partir de ce moment, mélanger doucement jusqu'à épaississement complet du mélange.
  5. Lorsque le lime curd a bien épaissit, le transvaser dans un pot et laisser refroidir. Conserver au frais.
